Choosing the Right Vine Leaf Variety: Sultana, Tokat, Sultani, Baladi, Thompson Compared
Five varieties, three decision axes
We ship five varieties of vine leaves in brine. The choice between them comes down to three questions:
- What is the cook step? Cold-rolled retail, oven-cooked ready meal, or industrial retort?
- What is the brand story? Authentic Levantine, Mediterranean origin, Asian-market volume?
- What is the lead-time tolerance? Türkiye-origin programs ship faster; Syrian and Xinjiang programs trade time for character or scale.
Variety-by-variety
Turkish Sultana
- Character: tender, even-coloured, mid-sized. Sultaniye (Thompson Seedless) from Aegean Türkiye.
- Best for: line-speed sarma/dolma production, retail private-label, hand-wrapped programs
- Lead time: 14-28 days depending on grade
- Pick this when: you want the most predictable wrap behaviour
Turkish Tokat
- Character: slightly thicker, deeper colour, holds shape under heat. Tokat-region cultivar from Black Sea Türkiye.
- Best for: oven-finished ready meals, retort-pouch products, foodservice volume programs
- Lead time: 14-28 days
- Pick this when: cook-step structure matters more than initial tenderness
Syrian Sultani
- Character: Middle Eastern Sultana cultivar; fragrant.
- Best for: authentic Levantine ready meals, Middle Eastern retail, recipe specifications that name Sultani
- Lead time: 21-49 days depending on grade
- Pick this when: your product specification or consumer base recognises Sultani by name
Syrian Baladi
- Character: indigenous Damascus-countryside variety. Smaller leaf, deeper green, distinct profile - not a Sultana cultivar.
- Best for: authentic Levantine retail (yalanji, warak enab), diaspora private-label
- Lead time: 21-49 days
- Pick this when: your recipe is a traditional Levantine dish, not a generic dolma
Xinjiang Thompson Seedless
- Character: high-altitude Thompson Seedless from Turpan basin, China. Crisp, large-format leaf.
- Best for: Asia-Pacific destination programs, container-load volume contracts
- Lead time: 28-56 days depending on grade
- Pick this when: you ship to Asia-Pacific or need volume scale at competitive landed cost

Blends are common
Many ready-meal manufacturers run blends - typically Tokat plus Sultana - to balance structure and tenderness in one bucket. Tell us your line's wrap behaviour and target appearance; we can quote a blend ratio with a single SKU.
A note on naming
Variety names are not always used consistently in international tenders. "Sultana" is a cultivar name; "Sultani" is a specific Syrian cultivar within the Sultana family; "Thompson Seedless" is the same plant as Sultana under a different commercial name. Specify by cultivar plus origin region to remove ambiguity.
